Potato Green Chili Cheese Soup
Serves 6-8
1 red pepper, diced
8 medium potatoes, cubed
Chicken stock or water to cover potatoes
1 oz butter
1 oz olive oil
3 onions, chopped
2 tsp salt
2 tsp each cumin, oregano, coriander
2 tsp minced garlic
4 - 8 oz diced green chilis to taste
1 & 1/2 cups half and half
Grated jack & cheddar cheese, mixed
Cook potatoes until tender - about 20 minutes - saving cooking water or stock for puree. Saute onions, peppers and garlic in butter and olive oil til soft, add seasonings. Puree potatoes in cooking water or stock - add to onion mix. Add half and half and green chilis.
Garnish each serving with jack and cheddar cheese.
